Source NM has a good roundup of interim committees and some of their goals:

They have info that doesn't seem to be on the official legislative website yet. The official page for interim committees is
https://www.nmlegis.gov/Committee/Interim
but clicking through to a few committees I was interested in, I only saw 2022 schedules, nothing for 2023.

The Action committee is tentatively planning on holding a workshop on understanding interim committees on the evening of Wednesday June 21. More info will be posted soon.
